Chopsticks+Forks Family, Founded in 2016, together since 2019.

Diversity is our nature.

At Chopsticks+Forks, we are a tight-knit team that chooses quality over quantity. We believe in slow food — unhurried tables, warm conversations, and the quiet certainty that what truly connects us is “comfort-food”. Because for everyone, everywhere, comfort food is what takes us “home”.

Jusep Sim — Founder (2016)

Jusep believes the table is the most honest place in the world. That comfort-food — no matter whose grandmother made it — is the closest thing we have to a universal language. He started Chopsticks+Forks because he wanted to host the kind of meal where strangers leave as something a little closer to friends. Unhurried. Curious. Generous. He still leads tours himself when the moment calls for it, because the founder showing up with a fork in hand is, to him, the whole point.

Felicia Cohen — The Host (Founding hire, 2018)

Felicia was Chopsticks + Forks’ very first hire and remains our longest-tenured guide. With a background in photography and fine art — including her time as a Gallery Guide at the Art Gallery of Ontario — she brings a creative, visual eye to every tour.  Guests love her thoughtful touches and her talent for uncovering hidden gems and off-the-beaten-path discoveries. After more than eight years, Felicia is still one of the most requested guides for those seeking an artistic and gourmet lens on Kensington Market.  Ideal for: art + food pairings, photography enthusiasts, unique local specialties, and guests who appreciate a caring, creative host experience.

Jessica Halliday — The Storyteller (Joined Spring 2019)

Jessica Halliday is a lead host on the International Food Tour, bringing people into the rhythm of a place — not just through it.  Her hospitality was shaped at Disney Cruise Line, where guest experience was treated as an art. She’s brought that to Toronto across seven years in Kensington Market.  Her strength is reading a room — when to guide, when to step back, how to make moments feel natural rather than staged. Her familiarity with the neighbourhood makes storytelling personal and engaging.  Ideal for: intuitive hospitality, unhurried pacing, personal storytelling, and discerning travellers seeking a considered, high-touch experience of Kensington.

William Jordan — The Historian (Joined 2019) Actor-turned-guide with a gift for bringing Kensington Market’s multicultural layers to life. Featured in National Geographic (2024) for his deep knowledge of Toronto’s evolving food scene and cultural crossovers. Guests consistently praise his warmth, storytelling, and ability to customize tours on the fly. With over seven years guiding, William excels at connecting guests to the neighborhood’s rich immigration stories and culinary evolution. Ideal for: food history, immigration narratives, fusion cuisine, and intellectually curious travelers seeking rich narrative context.
